# How to Make It:

01 - Heat olive oil in a large skillet over medium heat. Add diced onion, bell pepper, and zucchini. Cook for 5 minutes until softened.
02 - Stir in chopped spinach and diced tomato. Cook for 2 minutes until spinach wilts. Add black beans, ground cumin, smoked paprika, salt, and black pepper. Stir and cook for 1 more minute. Remove mixture from skillet and set aside.
03 - Whisk eggs and milk together in a bowl. Pour into the same skillet and scramble over medium heat until just set. Remove from heat and mix in shredded cheddar cheese.
04 - Heat the whole wheat tortillas in a dry skillet or microwave for about 20 seconds until warm and pliable.
05 - Lay each tortilla flat and layer the vegetable mixture, scrambled eggs, avocado slices, and salsa in the center. Optionally sprinkle with chopped cilantro.
